Ingredients for Classic Chicken Enchiladas
· 500 g Chicken Breast (thinly sliced)
· 8 Soft Corn & Wheat Tortillas
· 1 Brown Onion (finely chopped)
· 1 tbsp Olive Oil
· 1 Zucchini Grated
· 2 Cups Light Cheese
· Pre-made Tomato Cooking Sauce
Method for Classic Chicken Enchiladas
1. Preheat oven to 160 degrees (fan forced). Heat oil in large frying pan medium to high heat.
2. Cook the onion for 2 minutes.
3. Add chicken & cook for a further 5 minutes or until brown, add zucchini & ½ of the cooking sauce. Let simmer for 3 minutes, remove from heat & stir in half cheese.
4. While that is resting heat up the tortillas (35 seconds)
5. Scoop in the cooked chicken mix and roll the tortillas tight and place in baking dish.
6. Time for 15-20 minutes and serve!
