Ingredients to make Healthy Eggs Benedict
· 1 Abe’s Bagel (Cut in half)
· 2 Eggs (poached)
· 2 Pieces of Short Cut Bacon
· Parsley, for garnish
Ingredients for Hollandaise Sauce
· 6 Egg Yolk's
· 2 tbs Lemon Juice
· 1 tsp Dijon Mustard
· ½ tsp Salt
· Pinch of Pepper
· 1 Cup Butter (melted)
Method to make Healthy Eggs Benedict
1. Make sauce. Add the egg yolks, lemon juice, Dijon mustard, salt & pepper to a high power powered blender & blend for 5 seconds. Then slowly pour in the melted butter with the blend on medium high, until you’ve fully emulsified the sauce.
2. Cook bacon on small pan medium to high heat, about 1 minute on each side or to your liking & set aside.
3. Bring a pot to simmer, create a vortex with a spoon & crack & the eggs for 3-4 minutes, remove eggs from pot and set aside in a bowl.
4. Cut bagel in half and toast to your liking.
5. Once bagels are cooked you can assemble your eggs benedict. Place bacon on first followed by the egg & and add as much sauce as you would like & then sprinkle some parsley on top.
